This is a super quick, crisp and cool salad for anytime. Heat the rice vinegar and add a dash of sugar. Boom, done.
You can def slice the cukes thinner, or add toasted sesame seeds at the
end, or even add thinly sliced shrimp [that is good -ed.]. These cucumbers from Enterprise Farmers (MA) via the hardworkers of the
Somerville Mobile Market.

We do this so much in the summer with many veg's from the garden. Try it with a a few dash's of good quality fish sauce, feel it tastes much better with the "umami" going on.
Fish sauce is good, but shoyu, is so delicious with the rice vinegar and cucumber flavors.....
