This was a variation on apple pie from a Moosewood cookbook. Instead of making a crumble top I completely cheated and think life will never be the same...
Take a second pie crust and cut some air holes/leaf shapes across the bottom then just flop it over the top of your filled pie. If you don't like lots of buttery crust you won't like this. If you don't like slightly gooey apple pie you won't like it. If you do... then you now have a secret weapon. Total success. BTW don't precook any of the crusts. 1 hour start to finish, peeling apples and everything.
