Ok, now what do I do with these... besides pickle them and throw them away later?? Classic quote from Pops, "Americans are the only people on earth that refrigerate their garbage for 2 weeks before throwing it way."

Beets are so good. I love putting sliced beets on a piece of aluminum foil on the grill. Put a pad of butter on each slice. Flip after 7-10 min and let sit for another 7-10 or until tender.

We always clean and roast in the oven until they are tender and carmelized then quarter and top a simple spinach salad (don't forget to save the greens to cook with maybe a few turnip and collards).
Agree on the roasting. Then peel, dice and add to pickled herring in sour cream. To me, this is the reason beets were invented!
